Mason Jar Peach Cobbler Recipe
Adorable and convienient! These single serving peach cobblers are the perfect summer treat!
Peach Mixture
- 4 cups fresh chopped peaches (about 4 medium peaches)
- 4 tbsp sugar
- 2 tbsp cornstarch
- sprinkle cinnamon
- 2 tbsp lemon juice
Dough Mixture
- 1/4 cup heavy cream
- 2 tbsp lemon juice
- 1/2 cup flour
- 1 tbsp sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 4 tbsp cold unsalted butter (diced)
- Preheat oven to 375 F
Peel peaches by placing them in boiling water for approximately 30-40 seconds, then transfer them to an ice bath. Remove skin.
De-pit and cut peaches into small chunks.
In a bowl combine cornstarch, cinnamon, and 4 tbsp sugar. Add peaches and 2 tbsp lemon juice. Stir until well combined.
Divide peach mixture evenly among 12oz jars, and place on a baking tray. Set aside.
- In a small bowl, combine heavy cream and 2 tbsp lemon juice. Whisk to combine and set aside.
- In another bowl, combine flour, baking powder, baking soda, salt and 1 tbsp sugar. Whisk dry ingredients together.
Add cold diced butter to dry ingredients, mix together with hands until mixture is crumbly.
Add the cream mixture to the butter mixture, stir until combined but the dough is still crumbly.
Spoon the dough in clumps over prepared fruit jars. Sprinkle with sugar on top if desired.
Bake at 375 F for about 35 minutes, or until tops are golden brown and a toothpick inserted in the center comes out clean.
Serve hot or warm with a scoop of vanilla ice cream on top!

Note: if the dough topping sticks to the sides of the jars, and does not sink with fruit after removing from the oven, take a butter knife around the inside edge to separate from jars.
You can bake peach cobbler ahead of time and store in the refrigerator for up to 24 hours. When ready to serve, bake an additional 5 minutes at 350 F until peach cobbler is warm.
