Ingredients

Ingredients:

  • 3-4 apples
  • 1 pie crust store bought or homemade
  • 1-1.5 cups heavy cream
  • 2 eggs
  • 3 tbsp sugar
  • 1/4 tsp cinnamon small sprinkle
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest

Instructions

  • Preheat oven to 350F. Place pie crust in a floured pie dish, and press into corners of dish. Dock pie crust by poking holes in the bottom with a fork. Refrigerate crust while prepping the filling.
  • To make custard filling, combine heavy cream, eggs, sugar, cinnamon, vanilla extract, and lemon zest. Whisk until smooth and well combined. Set aside.
  • Peel and de-core apples. Shred using a cheese grater to create thin apple slices.
  • Remove as much liquid as possible from the shredded apple, and place in chilled pie crust. Cover apples with an even layer of custard filling.
  • Bake at 350 for 45-60min or until golden brown and center of pie no longer wobbles.
  • Let cool on a baking rack, then dust with powdered sugar.
  • ENJOY!

Notes

Optional:
Add a layer of crushed almonds over your pie crust before adding the apple filling to give a little extra crunch to your pie.
Another addition you can add is raisins.
If you experience issues with a soggy crust bottom, try squeezing as much liquid as possible out of the shredded apple before adding it to the pie crust.
Or blind bake your crust at 350 degrees for about 5-10 minutes.
