Instructions
Peel and dice potatoes into large cubes.
Place potatoes in large pot, and add cold water until potatoes are covered. Add salt to water and bring to a boil.
Cook potatoes approximately 10 minutes until tender and potato easily falls off inserted fork. Drain potatoes and rinse under cold water to shock.
Melt 1 tbsp butter in large pot on medium heat. Add minced garlic and sauté until fragrant. Add cooked potatoes and stir to coat with garlic.
Add half and half and butter and mash potatoes until smooth using a masher, hand mixer, or transfer to mix master. Adjust half and half and butter to achieve soft creamy texture.
Add 1-2 tsp truffle salt (taste after 1 tsp and add more to taste) and 1 tsp fresh ground pepper.
Transfer to serving dish and sprinkle with grated parmesan or gruyere cheese (if desired) and a pinch of truffle powder.
