Garlic Truffle Mashed Potatoes

Ingredients
  

  • 6 russet potatoes
  • 4 cloves garlic minced
  • ½ - ¾ cup half and half
  • 4-5 tbsp butter
  • 1-2 tsp truffle salt to taste
  • 1 tsp fresh ground pepper
  • 1 pinch truffle powder
  • 2 tbsp grated parmesan or gruyere cheese *optional: to top*

Instructions
 

  • Peel and dice potatoes into large cubes.
  • Place potatoes in large pot, and add cold water until potatoes are covered. Add salt to water and bring to a boil.
  • Cook potatoes approximately 10 minutes until tender and potato easily falls off inserted fork. Drain potatoes and rinse under cold water to shock.
  • Melt 1 tbsp butter in large pot on medium heat. Add minced garlic and sauté until fragrant. Add cooked potatoes and stir to coat with garlic.
  • Add half and half and butter and mash potatoes until smooth using a masher, hand mixer, or transfer to mix master. Adjust half and half and butter to achieve soft creamy texture.
  • Add 1-2 tsp truffle salt (taste after 1 tsp and add more to taste) and 1 tsp fresh ground pepper.
  • Transfer to serving dish and sprinkle with grated parmesan or gruyere cheese (if desired) and a pinch of truffle powder.
  • Serve and enjoy!
